In my House we have Curry Night every Thursday Night... Its usually a great way to get rid of the last of the veg before the weekend shop.
This is the quickest and simplest recipe ever it takes literally 15 minutes.
If you don't like beef replace the beef with chicken.

This Recipe is for One Serving....

1/2 Pack beef stir fry (I use the Aldi beef)
Olive Oil for cooling.
1 Red Onion Sliced.
Handfull of mushrooms whole.
1/2 carrott sliced in sticks.
Chopped Pineapple.
Red, Yellow and Green Peppers sliced in strips.
Curry Sauce.

Heat the Olive Oil in your Pan.
Add in all the Vegetables and constantly keep them stirred.
When the veg is almost finished pop in the pineapple and cook for the last minute.

Place all the Cooked Vegetables in a seperate bowl and set aside.

Heat up some Olive Oil in your Pan.
Add in Your Strips of beef and cook until brown.
Make up your Curry Sauce and add in with the beef, 
Finally add in your veg from earlier and simmer for 5 minutes.

Serve with Rice or Chips and Enjoy!!!!
