Had the most amazing Day Saturday at the IrishBlbInspireDreams meet up in Cream Dreams Wexford.
Thank you so much Danielle, Anita and Sarah for a Fab Day, Oh and Kathleen too, It was great to meet all the girls on the day.
The Sun was shining, the Wexford Martime Festival was on and we had yummy icecream.

We had an inspirational talk from Niamh from Holos on the day, Niamh Hogan is from Enniscorthy as well, and is the owner of Holos Skincare. 
She has been a practicing Arimatherapist and Natural Health Professional since 2003.
It is Niamh's clinical experience and passion for Essential oils and natural lifestyles that led to the creation of these products.
Holos products are made with Essential oils, they are natural and holistic and hand crafted in County Wexford.
It's great to find an amazing local brand in your own town.
Niamh popped some Body Oils in our Goodie bags on the day and they smell amazing, I tried mine last night after a nice relaxing soak after a long busy weekend.
I could still smell it when I woke this morning.
I will definitely be ordering more of her products this week and will keep you all updated with what I think of them.

The wonderful Dawn from Benefit Cosmetics at Sam Mc Cauleys came and gave us all a make up demonstration on the day, she talked us through everything step by step and showed us step by step how to properly apply that dreaded eyeliner.
she showed us some amazing Benefit Products and shared some fab tips with us.

We had the most amazing icecream from Cream Dreams in Wexford.
Knickerbockerglory the size of it.
The girls were amazing to us on the day and couldn't do enough for us.
I'm going to bring the chaps in next weekend for a treat.

This is similar to the recipe i posted yesterday for the banana peanut butter icecream, this icecream tastes amazing and its so hard to believe its actually good for you.
The Bananas take the Consistancy of icecream when blended after frozen.


3 Bananas.
Around 12 Frozen Strawberries, I used a bag of frozen strawberries from Aldi.
1 tsp of Vanilla Essence.

Chop the Bananas into Large Chunks pop into a plastic Container and the freeze for at least 2 hours.
Once the Bananas have frozen, Pop them into a blender, add the strawberries and vanilla essence.
And Blitz until smooth.

Serve Straight away or pop in the freezer to have later.

Did you know that when Bananas are frozen and then Blended they become the same consistancy as Icecream.
This Recipe Contains just two ingredients.

2 Bananas.
1 Large Tablespoon of Peanut butter, I used Meridian smooth Peanut Butter.

Peel your Bananas and cut them into large chunks.
Pop them in a container and freeze them for about Two hours until hard.

Place Frozen Bananas and Peanut Butter into Blender and Blitz until smooth.

Pop into a bowl and enjoy straight away. Or pop back in the freezer for later.

I always add a sprinkle of Cocoa Nibs which are actually a healthy alternative to choc chips as they are beans that have been roasted, seperated from their husks and broken into smaller pieces.
These are available from most Health Food Stores, I always get them from Holland and Barrett.

Here's some Fab Tips I've picked up over the Years,  They will help you become a Domestic Goddess!!!!

Kitchen Hacks....

To check if your Eggs are fresh.... Put in water and if it floats its off and if it sinks its ok.
Keep hard avocados next to bananas in the fruit bowl.... The Ethylene gas in the bananas will ripen them.
To remove insects from Vegetables.... Fill the sink with cold water and add a tsp of salt. The insects will sink to the bottom.
Hold a stale Baguette under a running cold tap.... shake off the excess water and pop in the oven for ten minutes, it will be as fresh as when you got it.
To get rid of onion smells from your hands.... rub them on metal.
If you have leftover cream.... Freeze and use for sauces.
For instant crispy croutons.... Remove the crusts from white bread, cut into squares and microwave them on full power for one minute.
To avoid rack marks on a cooling cake.... Top the Cooling rack with a tea towel first.
Use Raspberry jam in a Victoria sponge as the pips stop the top and bottom from sliding apart.

Perfect Preserves....

Warm Citrus Fruits before making Jam to obtain the most juice from them.

Skim the scum frequently while the jam is boiling or add a small knob of butter to disperse it.

To skin Peaches and Tomatoes easily, First place them in boiling water for one minute, followed straight away by cold water for a few minutes.

Warm Sugar before adding it to Preserves so it dissolves quicker.

Revive Your Wardrobe....

Run a wire hanger over your clothes before you wear them to remove static.

Add 1 tbsp of vinegar to water when hand washing silk items for a professional crispness.

Carefully use a new disposable razor to remove bobbles from jumpers.

Put Bicarbonate of Soda or Citrus Peel inside shoes overnight to freshen them.

Store Pleated Skirts in the leg of a pair of tights to stop the pleats from being pulled apart from the hanger.

If Suede looks tired, Revive them with the steam from a kettle, then get marks off carefully using an emery board.

Tricks For The Home....

To remove tea stains from Cups, use a kitchen towel and rub the stained areas with Bicarbonate of Soda.
The abrasive action will remove the marks.

To make your bin easier to clean, put a couple of sheets of kitchen roll in the bottom, its helps catch any leaks and bits that miss the bag.

To remove Limescale from an electric kettle, cover the element with either white or malt vinegar, bring it to the boil and then give the kettle a gentle shake.
Allow to cool, then rinse.

To get rid of weeds on your Path or Patio, add 125g of salt to 1 litre of cold water, stir untill it dissolves and then splash over.


You know by now that i love a recipe with absolute minimum ingredients.
A very short ingredient list generally equals a healthier, not to mention simpler recipe.
And this recipe for my pomegranate and coconut water Popsicles are no exception, i make these every summer for the chaps and they love them, the Pomegranate can be replaced with any other fruit or even a mix of fruit, they especially love this made with strawberries.

During the summer the fussy eater in this house is 5 and always asks for Icepops to cool down.
Store bought Icepops, whilst they are ok as a rare treat, are not the best choice of a snack for kids as they are usually very high in sugar and Artificial Sweetners and Colourants.

This recipe makes enough for 6 Popsicles using a Popsicle Mould which can be purchased in any pound sop for around €1-€2.


6 tbsp Pomegranate Seeds
250ML Coconut Water.
I use Vita Coco Water.

Place 1 tbsp of Pomegranate Seeds into the bottom of each Popsicle Mould and the fill to the top with Coconut water.
Place in the freezer for about an hour or until the Coconut water has started to freeze but is not completely frozen.
Using a knife stir the Coconut Water and Pomegranate seeds.
The seeds will have naturally sunk to the bottom but by stirring everything when the Coconut water has become a little more solid, you will be able to distribute them more evenly through the popsicle.
pop the lids back onto the Popsicle and freeze until completely frozen.
