They are so easy to make.
This Recipe makes 12 Muffins.
2 ripe bananas mashed
80g soft margarine or butter
70g dark brown sugar (or caster sugar)
150g plain flour
2 tsp baking powder
10-12 large strawberries choppped
1 extra banana for decoration.
Preheat the oven to 180°C/350°F/Gas 4.
In a bowl, beat margarine or butter and sugar until creamy.
Add eggs and mashed bananas with a fork.
Add the flour and baking powder and mix.
Add in strawberries and carefully mix in with spoon.
Grease a muffin pan or place in muffin cases on a baking tray.
With the extra banana i cut it into 12, 2mm slices and added a slice on top of each bun before i popped them into the oven.
Bake for 20 minutes.
Remove from oven and allow to cool before turning out.
TIP: When cooled pop into an air tight container and they will still taste fresh for up to 3 Days.
