HEARTY CARROT SOUP

This is my Favourite soup recipe great for a cold evening by the fire.



Ingredients:

2 Tablespoons of Coconut oil.
1 Small onion peeled and chopped.
5 Large Carrots, Washed and chopped.
1 Green apple chopped.
1/2 ounce of fresh ginger, chopped.
1/3 Cup of fresh orange juice.
1 Can Coconut milk.
2 Cups of Chicken stock.
1/3 Teaspoon Cayenne pepper or more for desired heat.
Garnish with fresh lime.

Directions:

In a large saucepan heat the coconut oil.
Saute the onion, carrot and apple in the coconut oil until tender.
Add  in the ginger.
Add the orange juice, coconut milk and stock to the Saucepan.
Let simmer for a minute.

Very Carefully in small batches, puree the soup mixture in the blender.
Return the mixture into the Saucepan and stir in the cayenne pepper.

Garnish with fresh lime.
