OLD FASHIONED RHUBARB PIE

Sometimes the best treats are made from the simplest ingredients.
I love the old fashioned style rhubarb pies, really thick and full of filling, half sweet and half sour from the rhubarb.
This recipe is quick and easy and has minimal ingredients.




Ingredients:

225g Plain Flour
125g Margarine
150ml Cold Water
Around 12 Sticks of Rhubarb.
Sugar to Sweeten
Icing Sugar to dust





Directions:

Preheat oven to 200 degrees.
Sieve flour into your bowl.
Chop up your margarine into cubes and rub into the flour.
Add sufficient water to make into a soft dough.
Put onto a lightly floured board and kneed lightly.
Seperate into two halves, One for the bottom and one for the top.
Roll out and add chopped up rhubarb.
Add sugar to sweeten.
Pop into the oven for 35 Minutes.

Lightly dust with icing sugar, allow to cool and serve.
